A hearty and flavorful one pot smoked sausage pasta that combines smoky sausage, tender pasta, and a creamy tomato sauce for an easy weeknight dinner.

1 tablespoon olive oil
1 pound smoked sausage, sliced into 1/2-inch pieces
1 medium onion, diced
3 cloves garlic, minced
1 red bell pepper, diced
1 teaspoon smoked paprika
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups chicken broth
1 (14.5-ounce) can diced tomatoes, undrained
8 ounces uncooked penne pasta
1/2 cup heavy cream
1/2 cup shredded Parmesan cheese
2 tablespoons chopped fresh parsley

Instructions

Heat the olive oil in a large pot or deep skillet over medium heat.
Add the sliced smoked sausage to the pot and cook until browned, about 5 minutes, stirring occasionally.
Add the diced onion, minced garlic, and diced red bell pepper to the pot. Cook until the vegetables are softened, about 4 minutes.
Stir in the smoked paprika, crushed red pepper flakes, dried oregano, dried basil, salt, and black pepper. Cook for 1 minute to toast the spices.
Pour in the chicken broth and the can of diced tomatoes with their juices. Stir to combine.
Add the uncooked penne pasta to the pot. Stir to ensure the pasta is submerged in the liquid.
Bring the mixture to a boil, then reduce heat to medium-low. Cover and simmer for 12 to 15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
Remove the pot from heat. Stir in the heavy cream and shredded Parmesan cheese until the sauce is creamy and the cheese is melted.
Sprinkle chopped fresh parsley over the pasta and serve immediately.
