A simple and hearty one-pan meal featuring savory sausage, sweet corn, and crispy roasted potatoes, all cooked together on a sheet pan for easy preparation and cleanup.

1 pound smoked sausage, sliced into 1/2-inch thick rounds
4 medium red potatoes, diced into 1-inch pieces
2 ears of corn, husked and cut into 2-inch segments
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped

Instructions

Preheat the oven to 425°F (220°C).
In a large bowl, combine the diced potatoes, olive oil, smoked paprika, garlic powder, dried thyme, salt, and black pepper. Toss until the potatoes are evenly coated.
Spread the seasoned potatoes evenly on a large rimmed sheet pan.
Place the sheet pan in the oven and roast the potatoes for 15 minutes.
Remove the sheet pan from the oven and add the sliced sausage and corn segments, distributing them evenly among the potatoes.
Return the sheet pan to the oven and roast for an additional 20 minutes, or until the potatoes are tender and golden brown, the sausage is heated through, and the corn is slightly charred.
Remove the sheet pan from the oven and sprinkle the chopped fresh parsley over the top.
Serve warm directly from the sheet pan.
